Crunchy Egg Wraps

Continuing my on my egg fad, I decided to try out a recipe for crunchy egg wraps that I found on TikTok. I liked that it had a lot of ingredients that I already had and it looked relatively easy to follow.

This video goes really fast, but I used the playback setting on TikTok to slow down the speed and see the steps easier. While she doesn’t give very much information on the portions or ingredients, I found the visuals to be fairly sufficient to figure it out.

I started by whisking 4 eggs, adding a bit of seasoning, and then spinach into a frying pan. I realized that I let the eggs cook a little bit too long before I add the spinach. If I tried this again, I would put the spinach in right after pouring in the eggs.

I then added the tortilla on top of the spinach and eggs. I realized that I also should have put the tortilla on earlier so that it would stick easier to the eggs. But, I think that it still worked out alright.

This is where I made my biggest mistake. The part in the video of her picking up the egg thing, placing cheese under it, and then flipping it went by very quickly, even on 0.5 speed. I didn’t see at first that she flipped the egg over so that the tortilla was now on the bottom. While it still tasted good, this mishap caused the tortilla to be a bit soggy, rather than crunchy.

This recipe tasted great and gave me lots of energy for the rest of the day. I would like to try it again and see if I can improve it the second time around. Despite my errors, I definitely recommended this TikTok recipe for a quick and nutritious lunch.
