Portugese Style Peri Peri Chicken
Now is the time to put together all of my preparations to make Portugese style Peri Peri chicken. I am really excited to try this recipe. I travelled to Montreal once and got to try it so I thought I should try and recreate it! I brushed up on my knife skills, spatchcocking, how to prepare it both before and afterward to make sure my ktichen is clean, what makes a good marinade and different ways to plate it. I am feeling confident with how it is going to turn out but the confidence is a result of my learning and preparation. This is the recipe I will be following:
My first step in this process is to use my newly acquired knife skills and spatchcock the chicken. I have never done it before so it will be a good application of my learning. Here is what my spatchcocked chicken looks like. I was impressed by my own skills. I thought it was a relatively smooth cut, thanks Anthony Bourdain!
The next step for me was making the marinade, don’t worry I didn’t forget to clean my counters after I prepared the chicken. I noticed that the marinade the recipe suggested had an oil, something acidic with the sherry wine, some spice with the peppers, and more seasonings. It however did not have any savoury flavours in it though so I am not sure how it will turn out. Here is a picture of the marinade ingredients:
The next step was to put the marinade on the chicken, I learned that some people wear a plastic glove while putting marinade on just so they don’t get it all over their hands, I just used one of those BBQ sauce spreader tools to distribute it evenly on the chicken. This is what the chicken looks like before it was put in the oven:
So far so good, It looks delicious! I then put it in the oven for the required time and this is how it turned out:
I wasn’t sure at this step if I burned it or that it was supposed to be looking like this.
Using my plating knowledge I learned from my videos I watched this is what the final product looks like.
I was a little bit unsure about my plating ability but I thought it turned out okay? The chicken did have some grease fall off of it that mixed with the sauce that I created but despite that I thought I did okay. I am in the process of learning, I haven’t perfected it yet! It tasted delicious and I thought my time preparing before tackling this one helped me out substantially!
