This week I decided to bake a type of cookies that I never have before. At this point in my life, chocolate chip cookies is about as far as I have branched out cookie wise, so I decided that it was time to switch things up. I love cinnamon flavoured treats so I decided to make cinnamon roll cookies. I went on Pinterest and found a recipe that seemed simple enough to start off my baking journey.
This is the recipe I used! I have made cookies before and this recipe was very similar to ones I have made in the past. The main difference for me was for the butter and brown sugar. You combine it with cinnamon separately and then form little balls out of the mixture, have them chill in the fridge or freezer, and then mix it in with the other ingredients at the end. This process took way longer than I had anticipated because the butter, brown sugar and cinnamon mixture was not sticking well together for me and it was difficult to get in into little balls. I finally got it all done, and they held up a lot better once they chilled for some time. Once the cookies were done baking, the butter mixture baked into the cookies as a toffee-like consistency. I ended up having to cook them a lot longer than it stated in the recipe, but that is okay because they still turned out delicious!

Even though this is only the first thing I have made, I feel so proud of myself because it is something new for me. The baking I have done in my life is so basic that the fact that I was capable of doing this is a huge win! (especially because they actually don’t taste that bad). I have some exciting ideas for what I will make in the upcoming weeks. It’s an unmatched feeling when you accomplish something new, I cannot wait to see what else I am capable of!
