Since it has been freezing cold this week, I decided to make something that reminds me of the warm summer weather… smores!… but in a little bit of a different form. I made smore cookie bars!
Any type of bar dessert I absolutely love and smore’s are my favourite treat in the summer so I thought these would be perfect. This is the recipe I checked out this week. Since I have been doing baking for a couple of weeks now, I find myself having to buy less each week because I have got a good collection of ingredients going on. However, my biggest struggle this week was finding marshmallow fluff. Apparently, it the absolute hardest thing to track down at a store. I went to Superstore, Co-op and Sobeys and had no luck each time. Finally, I went to Walmart and after running around there for about 30 minutes, I finally found some. I was honestly on my final straw and about to find something completely different to make because the recipe very clearly stated that you could NOT use plain, regular marshmallows, you HAD to use marshmallow fluff. Thank goodness I found it because it was all worth it in the end.
Here is what my bars looked like. Yes, I am aware that it kind of looks like a mess of a bunch of things together, but since the marshmallows and the chocolate chips melt in the oven, it is kind of expected. I am so thankful that this recipe included pictures as well! Looking at the written instructions alone, I do not think I would have been able to get this right. They are so so sweet so they will definitely take longer to get through, but they are a perfect substitution for when it is too cold to make smore’s outside!
