After going away for reading week, I came back with next to no food, so I decided to make something that I would easily be able to grab in the mornings or as a snack. Initially, I was going to make banana bread, but then I remembered that I had already made that before. Therefore, I decided to make apple cinnamon bread. It felt like dessert that you could have for breakfast. Plus as an added bonus, and apple a day keeps the doctor away and I love cinnamon apples.
This is the recipe that I decided to use. I went purely off of looks for this one and picked the one that I thought looked the most appetizing.
Below are pictures of my progress throughout. I began by mixing the dry ingredients together (the flour, salt and baking powder) in a bowl and putting it to the side. I then mixed all of the other ingredients together (sugar, eggs, vanilla, milk, butter) and placed that to the side as well. After that, I chopped up my apples and mixed it with the brown sugar and cinnamon. I initially thought that I would need more than one apple, but once it was chopped up into small pieces, I had plenty! The batter in the end, turned out to be similar to a cake mixture and it was also like that once it came out of the oven as well, but I believe that is exactly what it was supposed to be like. When I was putting it into the baking pan, I did half of the batter, topped it with half of the apples and then put the remaining of both of the mixtures on top. Then, I used a butter knife to swirl it around just a tad. I then made a crumble to sprinkle on top made out of brown sugar and cinnamon. Then I popped it in the oven and let it cook for about an hour! Once I took it out, I made a cinnamon glaze to drizzle on top and then it was good to go and let it cool before I tasted it!
I feel like every week I say I have made my new favourite thing, but this week I truly mean it. It is such a good thing to grab quick for breakfast, for a snack or even for dessert! I highly recommend, as it was super quick and easy. It’s baking time was a bit long, but I just carried on throughout my day and got things done while it was in the oven!
