One of my favourite candies of all time is peanut butter cups, plus I have always wanted to try the cookies that are half brownie, half cookie (brookie). Therefore, I decided to make cookies that were half brownie, half peanut butter cookie! One of my main concerns going into this was that I would need to go out and spend a bunch of money on ingredients each week (which we all know could get expensive, especially as a student), but I have come to realize that a lot of these recipes use the same things, give or take a few items, so it hasn’t been costly at all.
This is the recipe that I used this week. As someone who does not have an electric mixer and has been doing everything by hand, I was dreading having to make two types of dough, but it went a lot smoother than I had anticipated. I first began by getting all of my ingredients out. Setting them all out beforehand, I have found has made the process a lot smoother, especially when it comes to cleaning up because I can just put things away as I go. I first made the peanut butter cookie dough, which was super straight forward. All I did was mix together peanut butter, butter, brown sugar, an egg, vanilla, flour, baking soda and salt together. I simply just placed it in another bowl when I was done and reused the same one to make the brownie cookie dough to save some dishes. When making the brownie dough, I just mixed together butter, white sugar, cocoa, an egg, vanilla, flour, baking powder, salt and chocolate chips. The recipe said to let both mixtures chill in the fridge for about 30 minutes, but I knew I was going to have to form the two mixtures together, so I did not do that because I thought they would be easier to mix if they were soft. The way that they said to combine them was to use a toothpick to swirl them. Instead, I just grabbed a little ball each and squished them together so it was basically half peanut butter cookie, half brownie. I put them on a baking tray and let them cook for about 25 minutes and then they were good to go!
I tried one right as it came out of the oven because thats the only way to do it and they were so delicious! Unfortunately, I forgot to take a picture of the finished product because I rushed off to work right away and took them all with me to share (this recipe made so many cookies), but they were a big hit with all of my coworkers, so that confirms that they were good! I will admit, this recipe seemed like there was a lot going on and it was a bit intimidating when I first looked at this, but the wording was super simple to follow and it did not take a long time at all, other than the bake time. I highly recommend, even if you don’t bake often! This recipe did not provide any pictures of the process, other than the finished product, but I found that I didn’t even need them because it was so straightforward!
