Cream Cheese Brownies

One of my favourite treats is brownies. I decided to put a twist on it and make cream cheese swirl brownies! As I had mentioned previously, I have started a collection of the common baking ingredients, making this learning experience a lot less expensive than I had anticipated. All I had to get this time was cream cheese and eggs. Fun fact, I don’t like eggs on their own, so this has been my first time buying eggs during this learning experience!

This is the recipe I used!

I needed the following ingredients:

For the brownie batter:

  • 1/2 cup of melted butter
  • 2 eggs
  • 1 tablespoon water
  • 2 teaspoons vanilla extract
  • 2/3 cups cocoa powder
  • 3/4 cup plus 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

For the cream cheese mixture

  • 8 oz block cream cheese
  • 1/2 cup sugar
  • 1 tablespoon flour
  • 1 egg white
  • 1/2 teaspoon vanilla

First I preheated my oven to 350 degrees and lined my baking dish with parchment paper. For the brownie batter, instead of mixing the dry ingredients and wet ingredients separately, I was in a bit of a time crunch, so I just mixed them all together, but it still turned out good in the end! Once it was mixed together, I took about 1/3 of the batter and placed it in a separate bowl to use for the topping. I then mixed the chocolate chips into the part of the batter that was not being used for the topping. I then began the cream cheese mixture, which was definitely an interesting experience. First of all, I do not have any sort of electric mixer (as I had mentioned many times before), so I had to melt the cream cheese a bit so it was soft enough for me to mix by hand. It didn’t go too bad, there was just a couple of clumps. I knew it was all getting baked anyways, so I wasn’t too worried. My second issue was that when I tried to separate the egg white and egg yolk, it all just ended up falling into the bowl and the yolk exploded when I tried to get it out. I didn’t exactly know what the difference would be… so I just went for it and I don’t notice anything wrong! I then put little blobs of the brownie batter and the cream cheese mixture all over the top and then used a tooth pick to swirl it together. This blog that I used provided pictures of each step, which was a huge help for me during the process! It baked in the oven for about 45 minutes. They are definitely very sweet (which is to be expected), but they are still very good! However, I’m starting to think I need an electric mixer, a kitchen aid might be on my next grocery list.
