Falling for Creamy Squash Ravioli: A Classic Autumn Dish

This week I decided to try out a new recipe from the Hello Fresh app called Creamy Squash Ravioli.
I have cooked ravioli before, but have never used this particular recipe. Sometimes when I cook ravioli, they like to stick together when they are boiling and after straining them so I read the directions carefully to hopefully avoid this. I wanted to try out this recipe to become more familiar with fall flavour profiles since I am stronger with other seasonal flavour profiles. The last skill I wanted to work on was my knife skills when I was slicing the mushrooms since they are smaller and can be a bit more difficult than other foods.
I love the Hello Fresh app. It is always super easy to navigate through when looking at cooking steps, placing orders, and viewing the nutritional information. You can also change your delivery day, so your box will arrive on whichever day works best for you- I like Wednesdays!

I started with my mise en place, meaning putting everything in its place in French or more simply meaning getting everything out and prepped that you will need so you are not rummaging around in the kitchen completely disorganized and flustered, and with slicing the mushrooms. Before starting, I watched a Master Class episode that Gordon Ramsay made, where I learned what mise en place meant and how to slice mushrooms properly and safely.
With my mushrooms sizzling in a hot pan, I was able to start the foundation of my sauce. I learned a flavourful and creamy sauce can compliment squash rather nicely, and found a fun blog post about other delicious fall recipes using squash.
So will the ravioli stick together or no?
I asked ChatGPT how to ensure your ravioli doesn’t stick together and it told me to make sure I used a big enough pot so it would not be crowded and to stir it right after putting it in. This worked beautifully, thanks ChatGPT!
Final Thoughts
My first dish turned out wonderfully. The main things I learned from it were:
– the importance of mise en place
– slicing mushrooms safely
– how to combine fall flavours
– how to cook ravioli without it clumping together

It’s so nice to be in a course with you again. You were in my very first class at U of R, and now the last.
Ravioli sounds delicious. I’m such a fan of Italian food that I actually gasped when I realized I’ve never tried ravioli, LOL. I love how you tied in techniques like mise en place. For me, it has always been more like mise en place au hasard (everything placed randomly). The ravioli-sticking tip is super handy too. I’ll definitely keep that in mind. Looks like a big win all around!

This sounds absolutely delicious! The first thing it made me think of is the Butternut Squash Ravioli from the Cactus Club. But they pair theirs with a truffle butter rather than a mushroom cream sauce. Would you be able to share the recipes of the dishes you’re trying? If they all sounds as good as this one I would love to give them a try myself!
