This week I finally managed to track down imitation crab, so I decided to take a swing at the California Rolls I attempted a few weeks ago.
My first source was All Recipes California roll recipe. I found this recipe fairy simple to follow. I did make one key adjustment: I didn’t make my sushi vinegar, and instead used some premade stuff that I had picked up from T&T supermarket. I made sure to rinse the rice several times as outlined in the recipe. I wish I had a rice cooker, but I am stuck using a pot on the stove. It seemed to work fine though.
One of my biggest challenges has been finding the right balance of flavours. Although I love sushi, I am extremely picky, and I tend to either love or hate the rolls depending on where I get them. For example, I very rarely find grocery store sushi that I like, but I usually enjoy rolls from restaurants. I used the video below to get a bit more advice on the sushi rice. He says to be patient, and I was, but I still think I should have waited an extra hour before I made my rolls.
Patience is undoubtedly my biggest issues. My rice had good flavour this time, but it probably could have taken another hour or so to cool down and dry up a bit. I was pretty happy with these rolls, but I feel like I am hitting the grocery store level sushi, and I want them to be better. Onto next week for some more tweaks! The video below shows my journey.
Hi Danine, your sushi rolls are looking great! I would definitely prefer yours to any offered in grocery stores (which I will eat when desperate). When I started making them, they were always falling a part because I was not rolling them right enough. Also, I’ve never noticed a big difference between my rice cooker and cooking it on the stove – but maybe that’s just me.
Thanks for the encouragement and the rice cooker advice. I know a designated deep fryer works better than stovetop, so I assumed the rice cooker would be a similar improvement since so many of the youtube chefs recommend it, but maybe they are getting paid to advertise 😉

you got me laughing when you said you are stucked with cooking rice on the stove. even though i have a rice cooker but i do not remember the last time i used it hahaha…
i would like to know, can you use any rice for it? or there is a particular rice that you need to use

So many videos say to use a rice cooker! Maybe I don’t need one after all. You need a short grain rice for the sushi. I know Jasmine and Basmati are no good. The bag I bought specifically says Sushi rice.
