Soup-er Easy Lasagna
My wife and I made a decision recently: we needed a better plan for suppers.
We’ve never been the type to plan our dinners and we’ve always just figured it out day by day. But honestly? That usually meant staring into the fridge, waiting for inspiration to hit, or defaulting to takeout because nothing sounded good. Meanwhile, we had a shared saved folder on Instagram filled with recipes we swore we’d try someday… but never actually have.
Since we’ve been making a conscious effort to eat better, spend less, and cook more at home, we figured, why not start actually planning our suppers? Not full-on meal prep—just a little more intention. A different meal each night, but with an actual plan instead of a last-minute scramble after a long day at work and school.
This week, for the first time, we scrolled through our saved recipes and picked one: Lazy Lasagna Soup. Cozy, hearty, and, best of all, low effort.
Everything was already in our fridge and pantry, which made it even easier to throw together because I didn’t need to go shopping. Of course, I made a few adjustments to fit our dietary needs, but the main ingredients stayed the same:
- Minced garlic
- Onions
- Veggie ground
- Crushed tomatoes & tomato paste
- Spinach
- Italian seasoning & dried parsley
- Cracked Pepper
- Crushed lasagna noodles
It came together quickly with minimal effort and still had all the rich, comforting flavors of traditional lasagna AND it was vegan. It ended up feeding my wife, my mom, my two nieces, and me, I didn’t want any left overs since we have been meal prepping breakfast and lunch and the kids made sure I didn’t have any.
I’m excited to put many recipes from our saved folder to use.

I would love to follow what you find out. I resonated with your description of having no plan and defaulting to takeout, which of course gets expensive. I had lasagna soup once, and it was delicious so I would love to try this one out. How did you find the flavour?
