Doubling My Learning

This week I challenged myself to build a meal with more than one new recipe. I experimented with making Greek Lemon Rice. With the rice, I paired Lemon Dill Salmon and a tossed salad with a new recipe for Maple Dijon Dressing.

When looking for online ways to learn this week, I needed something quick and easy due to a very busy schedule. Therefore, I turned to Pinterest for inspiration and access to new blogs.

Charm Recipes

The first recipe I found was for the Greek Lemon Rice on a blog called Charm Recipes. I was drawn to this recipe because I wanted to find ways to jazz up simple rice. Charm recipes offered a printable version of the recipe which was super helpful when trying to follow more than once recipe at the same time. The ingredients and recipe steps were easy to follow. However, I would have liked to have more images of the process to help visualize the process.

Salads for Lunch

I had tons of romaine lettuce to use this week, so I was trying to find a fun way to experiment with a salad. This is how I stumbled across the Maple Dijon Dressing recipe on a blog called Salads for Lunch. I enjoyed learning from this blog because the recipes are simple and easy to follow. The blog also has a fun email list to get new recipes sent to you each week! I plan to make more recipes from this blog in future meals.

The Cooking Process

Even though I was following two recipes this week, I did not find the process overwhelming. I strategically chose to make a simple salmon recipe that I have been making for many years to reduce my cooking stress. I also printed off copies of the two recipes so that I did not have to keep switching between websites or screenshots on my phone. I enjoyed the extra challenge of making more than one new recipe in a single meal.

The Results

The meal was a success! I ended up eating the salad while I was cooking the rice and salmon because I was hungry, which was fun because it was like having a starter salad at a restaurant. The rice was flavourful and went well with the salmon. This cooking process has inspired me to want to try making more rice variations moving forward.

    That salmon and salad looks awesome! This is giving me some great ideas for lunches and suppers. Lately I find that I have no idea what to eat and I’m just eating random snacks around my house. Thanks for the inspo!

    What a nice healthy meal! For some reason your rice recipe made me think of Red Lobster’s rice. I’m also glad it wasn’t overwhelming – I find sometimes timing things to be ready at all the same time can be difficult.
