Week 8: Cheesy, Spicy and Delicious – Chicken Enchilada Soup
For this week’s learning project I decided to make a new soup. I chose chicken enchilada soup and the recipe was very easy. I made it in my crockpot so I put all the ingredients into my crockpot and let it cook on low for 5 hours! After it was done I took the chicken out, shredded it and then added cheese and cream and mixed all of it together.
The ingredients in this recipe were:
- Chicken breasts
- Enchilada sauce
- Chicken broth
- Diced tomatoes
- Onion
- Green chillies
- Black beans
- Corn
- Seasonings
- Mexican cheese mix
- Greek yogurt (I used cream instead)
This soup was something very different from what I would typically make but decided to try it out and it was pretty good. I had found this recipe on Tik Tok and it was pretty simple to follow. Below I have the documented process!
