Cooking with Semolina: Sweet and Savory Creations
This week I decided was kind of packed up and I had a tight schedule so I thought to make a very quick but light breakfast recipe that I love the most. I decided to make Suji ka chilla (Semolina Crepe). This is kind of like a crepe but in Indian version. Most of my cooking and my recipes are from my mom who would just instruct me on the video call. This is also one of them in which you don’t need much ingredients but yes you will get frustrated at some point if you are a perfectionist like me and wants to make perfect round circles. I never get them right on the first try and almost every time I make some scrambled chilla but this time I got the trick and perfected my chillas. The trick is to spread the oil or ghee (clarified butter) all over the nonstick pan so that the chilla has the space to get cooked and once it gets brown from the sides you first flip through the edges to see that all the sides have been cooked or not with the help of a sharp spatula made of stainless steel and then flip it one go just like you do it with a pizza .
For this recipe (for two people), you will need the following ingredients:
1 cup of Suji (semolina)
3-4 big spoons of yogurt
and half a glass of water
Mix it and let it rest for 30 mins.
Until then
chop one medium size onion and
3-4 green chilies
After 30 mins
Whisk the batter and add the vegetables with some basic spices
Adjust the consistency, make sure it is like a pancake (add water if needed)
Pour the batter in the pan and flip it in one go.
Your Suji ka chilla is ready.
