The Essence of Flavor: Mastering Veg Biryani

This week I was not well and was not able to try something new, so decided to make the best yet easy rice recipe. I decided to make  Pulao (Veg Biryani).  Veg biryani on the whole is an exotic dish which has an ensemble of colors, flavors, spices, vegetables and rice all blended in one! Every spoon relives a great cultural journey, accompanied by the heavenly layers of fluffy rice and flavorful tenderness of the cooked vegetables, saffron, cardamom, and cinnamon throughout. The sunlight coloured carrots, peas, beans, and potatoes give the dish a marvelous crunch and sugary taste, the fried onions, and the mint and coriander finish the dish with an unmistakable freshness. A spoonful of yogurt or a splash of ghee enhances this opulence placing the biryani into the category of satisfying staple food. Temped with cooling raita or sharp tangy pickle, veg biryani is a sight and sensation to behold and enjoy on the Indian food circuit.

This recipe is quite easy and can be modified by the preferences of the foodie. Since, I was sick and was not able to prepare a lot of things so decided to use limited vegetables.

Following are the ingredients of a veg biryani:

  • 1 cup of peas
  • 1 tej pata (bay leaf)
  • 1 onion half sliced
  • oil – 1 tbsp
  • salt – tsp
  • red chili – 1 tsp
  • Cumin seeds – 1 tsp
  • haldi (turmeric) – 1 tsp
  • water
  • rice (uncooked)

Following are the instructions:

  • Heat up the oil and add cumin seeds.
  • sauté the onions well and add the peas and add the bay leaves
  • Add the basic spices with rice
  • fill the pressure cooker with water and make sure it whistles till 3 times.
  • Veg Biryani is ready, serve hot!
