My Journey into Fluffy Cakes and Caramel Whipped Dream

As part of my EDTC300 learning project at the University of Regina, I’ve been exploring the world of baking. I wanted to challenge myself to make beautiful and tasty cakes from scratch—and this time, I focused on getting that perfectly fluffy base I’ve been trying to achieve.


👩‍🍳 Step 1: A Better Base – The Cake

In my earlier cakes, the texture was not as light as I wanted. This time, I made one important change: I added eggs to help with structure and fluffiness. I mixed the batter with a lot more care, combining all-purpose flour, sugar, and cocoa powder with eggs and milk.

🍯 Step 2: The Cream – A Sweet Caramel Twist

I wanted a simple but rich topping that matched the cozy flavor of the cake. After searching, I found the perfect recipe for Caramel Whipped Cream. I imagined something elegant yet minimal—just a light floral swirl of whipped cream with maybe a few strawberries on top.

So I started with a caramel base—butter, sugar, and cornstarch to thicken it. I was amazed by how rich and delicious it turned out!

🌀 Step 3: Real-Life Twist – The Cream Fiasco

My whipped cream looked good when I was making it—but when I tried to pipe it, everything got messy. It wouldn’t hold its shape the way I imagined. 😅

Instead of fighting with it, I went with a simple spread on top and added fresh sliced strawberries. The decoration didn’t match the vision in my head, but you know what? The taste made up for it!

✨ Reflection: What I Learned

This cake felt like a mini success. I got the fluffiness I was craving, I experimented with a new cream, and I learned that sometimes the simplest presentation is still beautiful.

Baking teaches you patience and creativity. Even when things don’t go as planned, the joy of creating something delicious from scratch is unmatched. I can’t wait to keep going on this learning journey—with more flavors, fun, and maybe a working piping bag next time! 😄
