Gooey Center Brownie Bliss: Recreating a Fuzzy Café Memory

Some recipes are more than just ingredients and instructions—they’re memories you can taste. For me, brownies take me right back to Café Coffee Day (CCD) in India. The warm, gooey brownie served with a scoop of vanilla ice cream—it was pure magic. That fudgy center, slightly crisp edge, and chocolatey aroma left a memory I still crave today.

So, I decided to bring that cozy moment back, right in my Canadian kitchen. And guess what? It turned out to be my best brownie yet—soft, rich, and gooey in the center!


My Twist on the Classic

To make this batch, I mixed dry ingredients with choco chips and added extra chunks of chocolate right on top before baking—this helped create that delightful molten center.

I used this eggless brownie recipe by Bake with Shivesh as a base for inspiration, but I followed my own instincts to get the texture I love—thicker batter, longer baking, and generous chocolate.

What I learned from this recipe is how layering ingredients, like placing chocolate chunks on top, actually controls how gooey the center stays. It’s the little tweaks that turn a regular bake into something memorable!
