We’ve reached week 5 of our learning project, and it’s incredible how swiftly time has flown by! Exploring Korean cuisine and immersing myself in its diverse and flavorful offerings over these past few weeks has been nothing short of enlightening. Each dish has brought its own unique charm and culinary journey, but today marks a particularly exciting chapter as I recreate a delightful summer treat: Mango bingsu.
Making this dessert is completely new to me, and I couldn’t contain my excitement after achieving such delightful results on my first try! The journey to create Mango bingsu has been a delightful adventure, filled with discoveries of new techniques and flavors that have expanded my cooking adventures. From learning to make the best shaved ice to trying out frozen mangoes and other ingredients, every part of this has been a fun adventure.
Now, I invite you to join me on this journey as I unravel the secrets behind crafting this refreshing dessert and share the absolute joy this sweet creation brings with my loved ones, friends, family, and YOU!
According to Kimchimari, there are 13 traditional and modern Korean desserts, each featuring unique ingredients and flavors. From my exploration of this resource, I’ve noticed that many Korean desserts incorporate sweet rice and red bean elements. Interestingly, there’s only one variation of bingsu featured on the website. This got me thinking about the versatility of bingsu—how it can be customized with different toppings to suit individual preferences.
At the heart of bingsu lies its milk-based shaved ice, which forms the base of this delightful dessert. What’s great about Mango bingsu is its gluten-free nature, and it can even be adapted to be lactose-free, making it accessible to friends and colleagues with dietary restrictions. Finding treats that cater to everyone’s needs can sometimes be challenging, so I’m particularly excited to try this recipe and share my thoughts with my friends.
Moreover, Mango bingsu is known to be a hit during the summer—a refreshing and crowd-pleasing dessert that brings joy to any gathering. I can’t wait to dive into making it and experiencing its flavors firsthand.
The mango bingsu I made was a huge hit with my family! We all loved how incredibly smooth the shaved ice turned out and how well the mango complemented the sweet and creamy base. According to the recipe from My Korean Kitchen, vanilla ice cream was suggested as an optional topping. However, truth be told, this delectable dessert is just as delightful on its own without any extras. That’s exactly how we enjoyed it, and it was absolutely delicious!
Interestingly, my son initially thought the shaved ice topping was cottage cheese. It got us thinking that cottage cheese could actually be a wonderful addition to the mango bingsu. I’m planning to try it as a topping next time I make this dessert at home. And if you’re looking to make it even creamier, adding a scoop or two of vanilla ice cream would definitely elevate the flavor! The slide below outlines why you should give this dessert a try. 😊
If you decide to recreate this dessert or try any creative variations, let me know how it turns out for you! Happy bingsu-making! 😊

Hi Dayna,
It’s wonderful when kids enjoy healthy foods that you can feel good about them eating! Finding recipes that everyone in the family likes is such a win. Cottage cheese is a nutritious option packed with protein and it’s great that your daughter has developed a taste for it early on. Trying new dishes together and sharing that bonding experience in the kitchen sounds like a lovely idea! I’m sure your daughters will appreciate you making this delicious-looking dish for them to sample 😊
Another beautiful post from you Rowena. Like Kate said, “You are natural at blogging”. Your blog posts are always beautifully written, and the pictures of the food are always inviting. Thanks for sharing this delicious recipe with us.

Rowena! You are a natural at blogging! I hope you keep it up. And you have great taste in food… I’ve been living off coconut yoghurt lately, and I am seriously considering a coconut cream/milk rendition of this, especially with mango. I was just commenting to Avery how great it is that her personal learning project turned into others learning with her and you are doing the same! You are born to be teachers and can’t wait to see what you accomplish on your journey. Best of luck to you out there 🙂
