A Punch of Calories in my Dinner

This week I decided to cook something different in Indian cuisine which is so flavorful, spicy and delicious. But the challenge is that in my mind I have a lot of options like, chutneys, fish fry, veg platters or a chicken curry. So, I shared my confusion with my best friend who lives in India and she picked chicken curry for me. I am a meat lover, passionate non- vegetarian. In India my mom and dad both cooked chicken and mutton for me but in Canada I started learning cooking and until now I never cooked any chicken dish. So this going to be my first experiment with chicken.

Sweet memories with chicken curry

In India, when I visited my grandparents’ house. My grand father always cooked chicken on clay stove and used homemade spices. Every time, I asked my grandfather how you would cook chicken so delicious and mouthwatering, and he used to smile and say with love. My parents learnt from my grandparents and I am hoping to learn these family recipes from them.

Chicken curry

Chicken curry originally orientated from the Indian Subcontinent which is one of the common cuisine of the Caribbean, Southeast, Great Britain and South Africa. Typically, the curry cooked with onion, tomatoes and some homemade species but in different places it is cooked in different ways. I follow the method which my grandparents and parents used. Ingredients

Chicken with bone or without bone.

Red onion

Ginger and garlic

Tomatoes

Green chilies

Coriander (for garnishing)

Species

Red chili powder

Turmeric

Garam masala

Chicken curry powder

Salt

Cumin seeds

Mustard oil.

Preparation

Firstly heat a mustard oil in a pan once hot adds cumin seeds. Once cumin flavor comes out than add finely chopped ginger and garlic and then after few seconds add chopped onions and green chilies and cook until it turns light brown.  Once the onions are translucent and cooked well than add all species and chopped tomatoes and cook for some more time on a low flame. At this stage add little bit of water so all the ingredients get cook well and do not get burn, water also helps the spices to release the flavors and aromas. Finally add chicken cook for some times, and hot water for curry and cook approximately 30 to 40 minutes on a medium flame and covered. If you are using a pressure cooker then it will be ready in one whistle. Turn off the stove and garnish with coriander leaves. And the delicious chicken curry is ready, you can serve it with rice, roti, naan or any other bread of your choice.
