Late Meal Prep for the week

Hi, welcome to my second post. I hope you’re doing well, especially now more than ever since everyone around me seems to be catching some kind of virus. I am posting this a little later than I planned to because I got called into work so many times and just did not have time to meal prep until today for this week, but it is here at last.

This week I give you Pasta Salad, which can be served cold and tastes delicious!

Pasta salad distributed into 6 containers

I attempted to make pasta salad this week following the recipe by Josh Cortis and succeeded at it. The meal costs me about $4-5 dollars per container, but I lacked a lot of ingredients, making it a second time will cost even less. Each one has about 500-600 calories and 50 grams of protein.

Josh Cortis said it would take about 20-30 mins but I ended up taking a whole 4 hours with groceries and cleaning. Although the time is very long, I hope to cut it down going forward as I learn more and become more efficient. I enjoyed the process of making the meals and definitely chose the right thing to want to learn.

Seasoned chicken All mixed in

Using Dijon mustard to coat the chicken and also using it in the sauce was an eye-opening experience and made the chicken taste so good. I loved the taste and worth a try, I used the one made by Maille. I also ended up making too much because I put the whole box of pasta and lots of veggies so I ended up with 1 more container than what I was looking for but I am sure I can have it for supper sometime so It is not an issue at all.

I currently don’t keep track of my calories and proteins but Josh Cortis was pretty amazing at highlighting how much in grams of each ingredient was added and also showed the total nutrition at the end of the video per container. His instructions were easy to follow, they were detailed and the ingredients were easy to find.

Picture of me and my friends at Mission ridge in ski and snowboards I also did a little bit of skiing last Friday with a few friends, followed by a little bit of knee pain during the weekend at work while everyone was down with a sickness at work.

    Yum! That looks so tasty! I also meal prep but I’ve never considered giving pasta salad a try until now! I feel a little silly because it’s so nutritious and can be quite easy to do! I’ll definitely have to try out your recipe! Stay healthy and sick-free my friend!

    First off, I think Josh is a great resource. I appreciate his humor and will definitely be checking out more of his videos. This looks like a great recipe! I have a pretty busy week coming up, and I was thinking this morning that I need to figure out what I’m taking for lunches. This looks like a great option, and I think that I have most of the ingredients on hand. Thanks for the inspiration!
