Breakfast meal prep, Overnight oats

This week I wanted to try something different, and what I ended up choosing was a simple overnight oats. Recently my brother has been making himself some and it just looks so good. I decided to make my own using a recipe from Love and Lemons. I added my own twists with a few parts of it but I will discuss that later. The recipe took me about 10 minutes including cleaning, and the shopping took another 10 minutes. I really hate shopping but I am trying to really get good at it, just takes too long. Why can’t the superstore just have the locations of the products online?

 

Jumping into my recipe I used whole rolled oats, chia seeds, oat milk and honey, and I added some frozen mangos (my twist). I don’t know how it tastes so far as I made them today for this week. I hope I like it because I have been having trouble finding something to eat for breakfast. I also have been looking forward to my 3-week block which is coming up in 2 weeks and can finally meal prep food that I can microwave, so look forward to those meal preps. I was also hoping to go ski and share some of my skiing expeditions but man was it cold last week, -40 seriously Regina and now it’s +2 so crazy.

    That is great that you are trying overnight oats! I am not really a breakfast person myself and find it hard to find breakfast food items that interest me other than toast with peanut butter. I used to eat quite a bit of overnight oats though. I enjoy how quick they are to make and the lack of prep needed in the morning, especially when I am rushed for time. I haven’t tried adding honey in before but that sounds like it would be delicious. I will have to give it a try! Another thing I enjoy making is egg bites. I make a bunch of them and then just freeze them. They are easy to warm up and eat when you are on the go!
