Meal the Burn: Back to Prep Life After Vacation
After 10 relaxing days away, it’s time to get back to meal prepping! Although we got back on Monday and immediately went grocery shopping after picking out our meals on our eight-hour drive home, I have to admit — I did not have it in me to actually meal prep once we got into the kitchen. No part of me wanted to do it, but I compromised with my wife and made our breakfast sandwiches for the week. We may not have prepped our lunches, but we had planned out our week’s worth of suppers and bought all the ingredients to cook them. Luckily, our suppers had enough leftovers to cover lunches for the next day, giving us nutritious and delicious meals without the extra prep!
For breakfast, we decided on breakfast sandwiches again because they were so easy and tasty the first time! I didn’t need to buy any extra ingredients since we still had leftovers from previous weeks. The sandwiches are simple: English muffins, egg whites, vegan cheese, turkey bacon (or vegan ‘bacon’ for me), and sriracha mayo. I wrap each sandwich in parchment paper, initial whose sandwich is whose, and store them in the freezer — bing, bang, boom!
This week’s supper choices came from Eating Well’s list of 34 Low-Calorie, High-Protein Meals for Dinner Tonight. We scrolled through the recipes and picked a few that stood out. The first was Shrimp Cauliflower Fried Rice — and oh boy, was it ever delicious! I went in for seconds and couldn’t wait to have it again for lunch the next day. The recipe called for sesame oil, eggs, cauliflower rice, shrimp, broccoli, bell peppers, garlic, soy sauce, and rice vinegar. Luckily, I had most of the sauce ingredients already, so I only needed to buy a few items.
Grocery List (Superstore):
- Cauliflower Rice: $5.49 + tax
- Broccoli: $9.00 + tax
- Bell Peppers: $5.99 + tax
- Grand Total: $20.48 + tax
I realized as I write this that I forgot to take pictures of anything! I really do have brain fog right now… But I did try out a new filming method for my vlogs, hoping to make them more aesthetic. This new “method” you may ask? Well it entailed my wife standing behind me holding the camera over my shoulders until I said, “Okay, stop.” Fingers crossed that you enjoy the new vibe!

Good for you for jumping right back in. I am also feeling the struggle after returning from vacation and trying to get back into the normal routine of life. Breakfast is a great place to start.
Something that I started a few months ago that has been working really well for keeping me and my family on track is cleaning and cutting my fruits and veggies the day I buy them. I bought a container with 8 smaller removable compartments inside it and am switching out the snacks continually with healthy snacks so that it is always readily available and we are not grabbing junk. I love this container because I don’t have to wait until all of the food is gone I can pull out the separate containers and wash them as the food is eaten. Having the cut fruit and veggies in the fridge makes it much easier. I am going to be trying your rice recipe this week I love finding new recipes.
