Crustopher is thriving (I think)! Starting the sourdough journey has been more challenging than I initially imagined. He began on Thursday, January 16th, but showed no growth on the 17th or 18th. After consulting with a friend, I decided to feed him with 1/2 cup of unbleached flour and 1/2 cup of warm water. I placed him on a cloth and wrapped the jar in a tea towel, which led to noticeable growth the next day. On the 19th and again tonight, the 20th, I discarded half of the starter and replenished it with 1/2 cup of unbleached flour and 1/2 cup of warm water. I’ve also ensured he’s kept in a warm spot to encourage fermentation.
