Red Velvet Magic: Creamy Layers & Classic Color

There’s something so fascinating about a red velvet cake—the bold red crumb against soft white frosting always feels festive, timeless, and full of charm. This week, I decided to bake one myself using a Betty Crocker red velvet pre-mix and top it with a homemade cream cheese whipped frosting that brought the whole cake to life!

🔄 My Baking Process

I used the premix to prepare the base, following package instructions carefully. What stood out to me was how evenly the cake baked—moist, soft, and rich in color. The deep red hue looked so beautiful, especially once it cooled and was ready for frosting.

🧁 The Frosting: Soft, Tangy & Dreamy

I made the frosting fresh using:

  • 200g cream cheese

  • 1 cup heavy cream

  • ½ cup powdered sugar

  • ½ tsp vanilla essence

I started by whipping the cream cheese until smooth, then added the sugar and vanilla. Separately, I whipped the heavy cream to soft peaks and gently folded it into the cream cheese mixture. The result was a light yet stable frosting—perfect for spreading and piping!

Soft and light cream cheese frosting made this cake melt in the mouth.

🧠 Learning Resource I Used:
I followed this frosting method from beyond frosting website  which helped me understand how to balance the texture and avoid it getting runny.

🎓 What I Learned

From this recipe, I learned:

  • The importance of chilling the cream before whipping to get perfect peaks

  • How to fold whipped cream gently to avoid breaking the fluff

  • How a premix can still turn into something personal and artistic with a homemade touch

This cake also reminded me of how simple techniques can create elegant results—perfect for any occasion!
